12 large jalapeño peppers
8 oz. brie cheese, rinds removed and cut into small pieces
1 cup fresh blueberries
1/4 cup cream cheese, softened
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup panko breadcrumbs
2 tablespoons olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Prepare the jalapeños: Cut each jalapeño in half lengthwise and remove the seeds and membranes.
In a mixing bowl, combine brie cheese, cream cheese, blueberries, garlic powder, salt, and black pepper. Mix until smooth.
Using a spoon, generously fill each jalapeño half with the blueberry-brie mixture.
Mix panko breadcrumbs with olive oil until evenly coated.
Sprinkle the breadcrumb mixture over the filled jalapeños.
Place the jalapeño poppers on a baking sheet lined with parchment paper and bake for 20-25 minutes.
Once baked, let them cool for a few minutes and garnish with chopped parsley before serving.
