8 ounces of pasta (fettuccine or penne)
Salt (for pasta water)
1 tablespoon olive oil
1 cup of vegetable or chicken broth
8 ounces Boursin cheese (garlic & herbs flavor)
1 cup heavy cream
Freshly cracked black pepper (to taste)
Chopped fresh parsley or basil (for garnish)
Grated Parmesan cheese (optional)
Instructions
Bring a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Reserve ½ cup of pasta water, then drain the pasta and set aside.
In a large skillet, heat the olive oil over medium heat. Add the vegetable or chicken broth, stirring occasionally, and bring it to a simmer.
Add the Boursin cheese to the skillet, and stir until it melts and combines with the broth.
Pour in the heavy cream and mix well until the sauce is smooth and heated through. Let it simmer gently for about 2-3 minutes.
Introduce the drained pasta to the skillet, tossing it in the Boursin sauce until well coated. Cook for an additional minute.
Serve immediately, garnished with freshly cracked black pepper and your choice of chopped herbs or grated Parmesan cheese.
