4 cups cooked chicken, shredded or diced
2 cups long-grain white rice
4 cups chicken broth
1 cup cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn)
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried thyme or rosemary
Instructions
Preheat the oven to 350°F (175°C).
In a medium saucepan, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
In a large mixing bowl, combine the cooked chicken, sautéed onion and garlic, cream of chicken soup, sour cream, chicken broth, and the frozen mixed vegetables. Stir well to combine.
Stir in the rice along with the salt, pepper, onion powder, garlic powder, and thyme.
Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly.
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
Allow the casserole to cool for a few minutes before serving.
