  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, granulated sugar, and brown sugar until well combined.
  3. In another bowl, mix the grated zucchini, melted butter, egg, and vanilla extract until well blended.
  4. Pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined.
  5. Fold in the chocolate chips if you’re using them.
  6. Use a tablespoon or cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges look set but the centers are still soft.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
