1 pound of large shrimp, peeled and deveined
1 cup of diced tomatoes
1/2 cup of diced red onion
1/2 cup of diced cucumber
1/2 cup of diced avocado (optional)
1/4 cup of chopped fresh cilantro
1-2 jalapeños, finely chopped
Salt and pepper to taste
1/2 cup of fresh lime juice
1/2 cup of ketchup
1 tablespoon of hot sauce (optional)
Instructions
Start by cooking the shrimp. Bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove from heat and immediately transfer to an ice bath to stop cooking.
Once the shrimp are chilled, drain and pat them dry with paper towels.
In a large mixing bowl, combine the cooked shrimp, diced tomatoes, red onion, cucumber, and avocado. Toss gently to mix the ingredients.
In a separate bowl, whisk together the lime juice, ketchup, and hot sauce (if using). Pour this mixture over the shrimp and vegetables. Season with salt and pepper.
Toss everything together until well coated. Refrigerate for at least 30 minutes to allow the flavors to meld.
