Instructions

  1. In a medium saucepan, whisk together the sugar, flour, and salt until well combined.
  2. Gradually whisk in the milk, and cook over medium heat, stirring constantly until the mixture thickens and begins to bubble (about 10 minutes).
  3. Once thickened, remove from heat. In a small bowl, temper the beaten egg yolks by adding a small amount of the hot mixture into the yolks, whisking continuously. Then, slowly whisk the egg mixture back into the saucepan.
  4. Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring constantly until smooth.
  5. Remove from heat and stir in the vanilla extract and butter. Transfer the pudding to a bowl, cover with plastic wrap, and let it cool to room temperature.
  6. Once the pudding is cool, whip the heavy cream with powdered sugar until stiff peaks form. Fold half of the whipped cream into the pudding gently.
  7. In a serving dish, layer the vanilla wafers, followed by sliced bananas, and half of the pudding mixture. Repeat the layers, finishing with the remaining pudding on top.
  8. Spread the remaining whipped cream over the top and garnish with extra vanilla wafers or banana slices, if desired.
  9. Refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
