Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy, about 3-4 minutes.
Add the egg and vanilla extract to the butter mixture. Beat until fully incorporated.
Slowly add the strawberry puree, mixing until combined.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
